Espresso Channeling: Diagnose and Fix Uneven Extraction
When sourness and bitterness appear together or a familiar recipe becomes erratic, uneven flow is one possibility. Confirm the pattern before blaming the grinder.
Signs that may point to channeling
- Sourness and bitterness in the same cup. Uneven extraction can produce both, although roast and recipe can also contribute.
- Spritzing or one-sided blonding. A bottomless portafilter can make uneven flow visible, but appearance alone does not describe the whole cup.
- Erratic shot times. Large changes at the same recipe can suggest inconsistent puck preparation.
- Familiar numbers with an unexpectedly hollow cup. An average time can hide fast and restricted paths inside the puck.
Why uneven flow confuses the diagnosis
Water follows paths of lower resistance. Some regions can receive more flow while others receive less, creating a mixture of extraction levels in the same cup. This is why a simple finer-or-coarser response may not improve a shot that is channeling.
Very fine grinding can also demand more from puck preparation. If an adjustment makes the flow visibly less even, repeat the recipe with improved preparation before deciding whether the grind move itself was useful.

Build a repeatable puck-prep routine
The goal is an even bed and a level, repeatable tamp. WDT is one useful distribution method, but needle size and technique are not universal. Choose a routine you can repeat and evaluate it across several shots.
Tamp pressure matters less once the puck is fully compressed than tamp angle and consistency. Basket fit, headspace and clean hardware also deserve attention when preparation changes do not solve the pattern.
Repeat the plan before judging it
A visibly uneven shot is a poor reference for evaluating a recipe change. Record what happened, keep the planned variables steady, and pull again with improved preparation. The one-change comparison loop is most useful when the shots are prepared consistently.
